Fellow Aussies will remember these yummy biscuits from their childhood…my first pick always from the Arnott’s assorted creams packs when I was a little munchkin. Those mouthwatering coconutty biscuits sandwiching a jam & creamy centre didn’t last long in our house, I can tell you. I have been hoping to find an oat free recipe, but I couldn’t…no matter I have developed my own. Not a bad way to spend a cloudy Sunday, recipe developing & eating…2 of my favourite things (:

RAW VEGAN MONTE CARLOS

Gluten free, Dairy free, Sugar free, Raw, Vegan & Paleo-friendly

INGREDIENTS

Biscuits:

2 cups unsweetened shredded coconut

2 cups almond meal

1/3 cup coconut oil (extra virgin is best for sweet treats)

1 tsp ground vanilla beans (or scrape a pod or 2)

1/2 – 3/4 cup preferred sweetener (I used rice malt syrup)

Pinch of Himalayan salt

1 tbsp maca powder (optional, though it does give a nice butterscotchy richness)

Vanilla Cream Frosting:

Flesh of 1 young coconut (you get to drink the yummy water first)

2 tbsp preferred sweetener (I used coconut nectar here)

1 tsp ground vanilla beans (or scrape a pod or 2)

1 cup cashews (soaked for 4-6 hours, rinsed & drained)

Jam:

1 cup raspberries, mashed with a fork

1/2 cup chia seeds

1/2 tbsp lemon juice

METHOD

  • Mix jam ingredients well and leave to sit for a few hours in the fridge
  •  In a food processor combine all biscuit ingredients & blitz until a sticky dough forms; you may have to scrape down the sides once or twice
  • Place dough between 2 layers of baking paper and roll to desired thickness
  • Remove the top layer of baking paper and cut with a cookie cutter (or a small glass jar as I did)
  • Place cookies in the freezer on baking paper to set
  • While biscuits are setting, prepare the frosting
  • Blend frosting ingredients til smooth & creamy (about 5-10 minutes)
  • Remove mixture & set aside in freezer to firm up
  • Once the jam is set, and the biscuits are nice & firm, spread one biscuit with chia jam & the other with vanilla cream and gently join together
  • Once you have paired up all your delicious little cuties, return to the freezer for safe keeping until eaten
