Hello whole foodies!

Lazy, cloudy Sundays are the most perfect of days to potter around in the kitchen, aren’t they? After a crazy, but amazing, couple of months of work, travel & end of school year activities for the kiddies, it’s lovely to just…BE…for a few days. And for me that always includes a lil’ stress free, expectation free time in the kitchen. Filling my freezer with healthy holiday treats for mindful snacking doesn’t hurt either (: These little rose scented truffles will delight your senses, improve your mood, increase your energy and support your hormones…what more could you ask from one festive little ball?!?

PERSIAN DELIGHT CRUNCH TRUFFLE BALLS

PDC bliss balls

Gluten free, Dairy free, Sugar free, Raw, Vegan & Paleo-friendly

INGREDIENTS

1 cup fresh dates (I use medjool)

1 cup almond meal

1/3 cup coconut oil (extra virgin is best for sweet treats)

1 tsp ground vanilla beans (or scrape a pod or 2)

1/2 cup raw cacao powder

Pinch of Himalayan or sea salt

100g – 200g Love Smoothies Persian Delight Crunch Breakfast Sprinkles, depending on how crunchy you would like your truffle balls to be (buy here) 

1 tbsp mesquite (optional)

2 tsp rose water

Optional: extra pepitas, pistachios, goji berries, cacao nibs & rose petals for decoration

METHOD

  •  In a food processor combine almond meal, cacao, dates, mesquite, salt, rose water, coconut oil plus vanilla & blitz until a sticky dough forms; you may have to scrape down the sides once or twice
  • Transfer dough to bowl and then mix in Breakfast Sprinkles by hand
  • Roll mixture into balls, adding extra pepitas, pistachios, goji berries, cacao nibs & rose petals for decoration (if you wish) by pressing onto the still squishy balls
  • Place truffle balls in the freezer on baking paper to set
  • Enjoy with a cup of your favourite herbal or matcha tea (:
