Hello whole foodies!

Feeling super inspired by the fact that my birthday fell on a full moon this year (I mean WOW) I thought I would create something spectacular to celebrate and nourish myself lunar-style.

I’m all about allowing myself to feel good on my special day no matter what. Which means not expecting everybody around me to treat me like the princess I want to be for the day…though they can if they like (: Spoiling myself is an inside job, first and foremost. And honestly, when you are nourishing and loving yourself from within, you are showing those around you how you want to be treated. And yep, with that in my mind, this year I was LAVISHED with love, but most importantly I allowed myself to be lavished with love. So now, I freaking LOVE birthdays !!! And my challenge to myself (and YOU) is to treat everyday a little like my/your birthday, because we don’t simply stop being special, or deserving special treatment from ourselves, on the other 364 days now do we?

Now I know this cake looks a little crazy, and you may be wondering what the predominant flavours are? Well it definitely has lime in the coconut tones. It is choc full of amazing ingredients (all from my pantry). Now some may think these ingredients are a little extravagant in price as opposed to say, artificial food colourings and flavours…well my gentle suggestion to those curious souls would be this: we only have one body to carry us through this one precious life, so why not wholeheartedly invest in it to the best of our capabilities. I have to say that I don’t see good food as an extravagance, but rather, an investment in my future.

A tip to keep those layers relatively even is to mark the inside of the tin after you have pressed in the crust layer. The springform tin i used was 18cm/7 inch in diameter.

BLUE MOON TRIPLE LAYER CHEEZECAKE

Gluten free, Dairy free, Sugar free, Vegan & Paleo-friendly

INGREDIENTS

Base:

12 fresh pitted dates

1 1/2  cup macadamia nuts (or cashews)

pinch of sea salt

4 tbsp coconut oil

Filling:

GREEN LAYER (matcha-lime)

1 cup of raw cashews, soaked in water for 6-8 hours & rinsed (this process also increases their bio-availibilty by activating them)

1/2 cup coconut butter/paste

1/2 cup coconut cream

1/4 cup coconut nectar (more if you like sweeter) or preferred sweetener

1 tsp vanilla powder (or scrape a vanilla pod)

Juice and zest from half a lime

2 tsp matcha green tea powder

1/2 tsp green spirulina

BLUE LAYER (blue moon)

1 cup of raw cashews, soaked in water for 6-8 hours & rinsed

1/2 cup coconut butter/paste

1/2 cup coconut cream

1/4 cup coconut nectar (more if you like sweeter) or preferred sweetener

1 tsp vanilla powder (or scrape a vanilla pod)

Juice from half a lemon

1 heaped tsp Blue Majik™ powder (from E3 Live)

PURPLE LAYER (maqui-lime)

1 cup of raw cashews, soaked in water for 6-8 hours & rinsed (this process also increases their bio-availibilty by activating them)

1/2 cup coconut butter/paste

1/2 cup coconut cream

1/4 cup coconut nectar (more if you like sweeter) or preferred sweetener

1 tsp vanilla powder (or scrape a vanilla pod)

Juice and zest from half a lime

1 tsp maqui berry powder

METHOD

• Blitz the macadamias in a food processor until crumbly
• Add the dates, melted coconut oil & salt
• Blitz until doughy & sticky
• Press the mixture into the base of your cake tin (I use a 18cm/7 inch springform tin) & freeze until firm
• Blend all green filling ingredients until smooth & creamy
• Spread/pour onto base & freeze until firm
• Don’t bother rinsing the blender
• Blend all blue filling ingredients until smooth & creamy
• Spread/pour onto base & freeze until firm
• Don’t bother rinsing the blender and repeat the above steps with the purple layer
• Store in the freezer for up to 6 weeks…if it lasts that long!
