Hello whole foodies!

I love raw cookie dough, and I love dragonfruit, so when I was gifted a bag of Just Blends pure dragonfuit powder, I thought why not combine the two! Creamy, gooey cookie dough just got a colourful and nutritious makeover! Pink Dragonfruit is rich in antioxidants, essential fatty acids, vitamins and minerals, especially my favourite mineral magnesium. And mums, it’s also a wonderfully nutritious way to make kids food look more appealing, adding to smoothies, nice creams and milkshakes, without that crazy behavioural back lash from artificial red food dyes. These little balls are low carb and a source of natural protein. Get rolling!

Gluten free, Dairy free, Sugar free, Raw, Vegan & Paleo-friendly

1 cup almond meal

2 tbsp cashew butter

2 tbsp coconut sugar (or preferred sweetener)

2-3 tsp dragonfruit powder, available here: http://www.justblends.com.au

2 tbsp coconut oil, melted (extra virgin is best for sweet treats)

1 tsp ground vanilla beans, or unsweetened vanilla extract (or scrape a pod or 2)

1 tsp rose water (optional)

Optional: extra dragonfruit powder to roll the balls in, if you wish

  •  In a food processor combine all the ingedients until a sticky dough forms; you may have to scrape down the sides once or twice
  • Roll mixture into balls
  • Place cookie dough balls in the freezer on baking paper to set
  • Once firm you may like to roll in more dragonfruit powder
  • Enjoy with a cup of your favourite herbal or matcha tea (:
