Hello whole foodies!

Who doesn’t love raweos (raw “oreos”)??? I usually make them with a nut base, but I thought I would mix things up for a change, and accept the nut free challenge to cater for our nut free friends! I know a lot of schools and kindergartens are nut free these days, so these little babies can have a safe place in your littlie’s (or biggies!) lunch box. They also contain one of my favourite flavour combos…matcha & mint!

NUT FREE MATCHA & MINT RAWEOS

Gluten free, Nut free, Dairy free, Sugar free, Raw, Vegan & Paleo-friendly

INGREDIENTS

COOKIES:

3/4 cup activated buckwheat (or buckinis)

1/4 cup mesquite powder

10 fresh dates, pitted

1/4 cup dessicated coconut

4 tbsp coconut oil, melted (extra virgin is best for sweet treats)

1/2 cup raw cacao powder

2 tbsp pepitas

2 tbsp black sesame seeds

1 tsp ground vanilla beans, or unsweetened vanilla extract (or scrape a pod or 2)

Pinch of  Himalayan or sea salt

6 drops peppermint oil

Optional: 1 tsp of reishi, chaga &/or maca powder

FILLING:

1/2 cup coconut butter, softened

1 tsp matcha

2 tbsp rice malt syrup

1 tsp unsweetened vanilla essence

1 tbsp coconut oil, melted

 

METHOD

  •  In a food processor combine all the ingredients until a sticky dough forms; you may have to scrape down the sides once or twice
  • Roll mixture into balls and squash into a cookie shape
  • Place cookies in the freezer on baking paper whilst you prepare the filling
  • Mix filling ingredients in a bowl until combined
  • Spread filling between cookies and chill
  • Enjoy with a cup of your favourite herbal or matcha tea (:
