RAW CHAI CARAMEL CHEESECAKE

 

Gluten free, Dairy free, Sugar free, Vegan & Paleo friendly

 

INGREDIENTS

base:

  • 1 cup fresh pitted dates
  • 1 heaped tbsp LOVE SMOOTHIES superfood milk chocolatte blend
  • generous pinch of sea salt
  • 1 cup walnuts
  • 1 cup shredded unsweetened coconut

filling:

  • 2 cups cashews (soaked in water overnight, then drained & rinsed)
  • 2 heaped tbsp LOVE SMOOTHIES superfood vanilla chai blend
  • 1/4 cup melted coconut oil
  • 8 fresh pitted dates
  • sweeten with coconut nectar (or preferred sweetener) if necessary

toppings:

  • 1 x 100g block Loving Earth salted caramel chocolate bar (melted)
  • 2 tbsp coconut oil mixed with 2 tbsp raw cacao powder & 1 tbsp coconut nectar

METHOD

  • add all base ingredients to food processor & mix until sticky (but still slightly chunky)
  • press base into springform tin & chill in freezer whilst preparing the filling
  • blend (or process) all filling ingredients until smooth & creamy, scraping down the sides as you go (approx. 10 minutes)
  • pour filling over base & chill in the fridge for a few hours
  • when firm drizzle toppings over cheesecake in a fancy artistic fashion (just go for it!) & chill
