SPICED CHIA PUDDING

 

Gluten free, Dairy free, Sugar free, Vegan & Paleo friendly

 

INGREDIENTS

  • 1/4 cup black or white chia seeds
  • flesh of 1-2 young coconuts
  • 2/3 cup coconut water
  • 2 heaped tbsp LOVE SMOOTHIES Superfood Vanilla Chai Blend
  • optional: 1 tbsp coconut nectar (or preferred sweetener)

METHOD

  • blend flesh & water of coconut with LOVE SMOOTHIES Superfood Vanilla Chai Blend & sweetener until smooth (with the first 2 ingredients you just made coconut cream!!!)
  • pour into container
  • mix chia seeds into coconut mix
  • stir well
  • chill overnight

Serves 2-4

  • good quality granola/muesli
  • coconut yoghurt or kefir
  • shredded coconut
  • goji berries
  • pepitas
  • sunflower seeds
