CHOC PANCAKES WITH CHAI CASHEW YOGHURT

 

Gluten free, Dairy free, Sugar free, Vegan & Paleo friendly

 

INGREDIENTS

Pancakes:

  • 2 ripe bananas mashed
  • 1 tsp baking powder
  • 1 tbsp ground chia seeds mixed well into 3 tbsp water and soaked for 5-10 minutes
  • 3-4 heaped tbsp LOVE SMOOTHIES Superfood Milk Chocolatte Blend
  • 1/4 cup buckwheat flour
  • 1 heaped tbsp coconut flour
  • 2-3 chopped fresh pitted dates or a dash of coconut nectar
  • coconut oil for cooking

Cashew Yoghurt:

  • 1 cup cashew (soaked in water overnight & rinsed well)
  • flesh of 1-2 young coconuts
  • 2 heaped tbsp LOVE SMOOTHIES Superfood Vanilla Chai Blend
  • 2 tbsp coconut nectar
  • squeeze of lemon juice
  • 2 good quality probiotic capsules (just remove the gel casing first so you are left with the powder only)
  • a little water or coconut water to thin out as blending

METHOD

Cashew Yoghurt:

  • Blend all ingredient until smooth, adding liquid if you need to
  • you can eat straight away or you can leave it on the bench 12-24 hours to further ferment
  • refrigerate leftovers after fermentation

Pancakes:

  • mix all dry ingredients together
  • mash chopped dates into mashed banana
  • add chia gel to bananas and mix well
  • mix wet ingredients into dry ingredients
  • add some liquid if necessary
  • fry in an eco friendly nonstick fry pan with a little coconut oil as you would usually cook your pancakes
  • top with chai cashew yoghurt
